Salmon is a great source of protein and lots of vitamins and minerals! It's a great entree for dinner and while working with raw fish can be intimidating at first for some people, I hope this recipe makes for an easy and healthy dinner! If you don't eat or don't want to work with raw meat/fish, the teriyaki glaze can also be used to cook with e.g. tofu or seitan, to glaze vegetables, or to use as a dipping sauce. Just reduce it for less time (until your desired consistency)! What You'll Need:
Cut your salmon into 4 pieces (roughly palm-sized). Pat dry with a paper towel and season with salt and pepper. In a bowl, combine the soy sauce, mirin, sugar, and 1 cup hot water. In a separate bowl, mix cornstarch and 2 tbsp water. Combine the two. Heat your pan and add 2 tbsp oil. Add the salmon pieces skin side up. Spoon your teriyaki sauce over the salmon as it cooks, but reserve half to use as glaze later. Lower the heat. Cook for about 7-10 minutes depending on the thickness of your salmon. Flip the salmon over using a spatula. Once salmon is fully cooked, remove it from the pan. Pour the remaining sauce into your pan on medium heat and cook until sauce thickens. This may take between 5-10 minutes, depending on your desired consistency. (Thicker glaze will be easier for spreading on the salmon, while runnier glaze can be used to drizzle on top and for dipping). Remove from heat and spread the glaze over the top of your salmon. You can drizzle extra sauce over your rice and top the salmon with sesame seeds, red pepper flakes, and green onions if you'd like. If you’re serving this as an entree, salmon pairs well with many grains and veggies! I served it here with white rice and asparagus (not pictured).
