Looking for an easy entree or appetizer? These stuffed bell peppers are perfect and super versatile! For a main entree, I prefer to add some sort of grain. Here, I've used red quinoa, but you can also substitute couscous, bulgur wheat, barley, rice, cornbread stuffing, etc. To make it a bit heartier and filling as a main entree, I've added ground turkey - you can use chicken, beef, pork, etc. or keep it vegan/vegetarian by using tofu, soy protein, or just using the sauteed vegetables! What I love about this recipe is how easy and versatile it is. You can literally stuff whatever you've got on hand inside the bell pepper and make it taste good! Ingredients Stuffing

Wash your bell peppers, cut lengthwise into two halves, and remove the seeds. Cut most of the stem off and try to hollow out the inside (the more you hollow it out, the more stuffing you can fit in!) Dice your mushrooms, onion, carrot, and celery and mince the garlic. TIP: I like to set aside my onion and garlic from the other vegetables since they get added into the pan first! Heat a large pan on medium heat. Add 1 tbsp oil and 1/2 tbsp butter. When melted and combined, add in the diced onion to your pan. Once slightly browned and caramelized, add in the garlic. When browned, add in the rest of the vegetables. Season with salt and pepper. Once seasoned and cooked, remove your vegetables from the pan. Mix your ground turkey with 2 tbsp cornstarch and salt and pepper to season. Right before adding into the pan, add 2 tbsp oil and stir to combine. Add 1 tbsp oil to the pan and add your ground turkey in. Use your spatula to chop up the ground turkey into small pieces. Once browned, add in your quinoa and water/broth. Cook until the quinoa is soft and has soaked up the liquid. Transfer your veggies, turkey, and quinoa into your peppers. Sprinkle the cheese and breadcrumbs on top and bake at 350F for 10 minutes. Then broil until the cheese and breadcrumbs are browned and serve hot!
