Scallion pancakes are the perfect dish, in my opinion! They can be a simple appetizer for a lunch or dinner, you can pair it with scrambled or fried egg to make a breakfast sandwich, sort of like a simpler take on a Chinese jianbing, or you can make them into wraps for lunch like the above photo! Any way you eat them, they're simple and comforting, somewhat healthy with the greens, but still a little bit of a guilty pleasure! For eight scallion pancakes (roughly 6in in diameter) What you'll need:
Combine your flour and warm water in a large bowl. Knead until soft dough forms. It might be a little sticky, but resist adding flour until you've kneaded it a bit more. Try to form it into a ball. Place into bowl. Cover with a tea towel and let it rest for 10 minutes. While the dough is resting, chop your scallions. Add into a small bowl and mix with the sesame oil. Add salt and pepper. Spread some flour out onto a cutting board or silicone mat. Take your dough out. Split it into half, and then quarters, making 8 total balls. Take one ball and roll it out into a long rectangle horizontally. Spread a spoonful of your scallion mixture onto the dough in a horizontal line. Roll up your dough into a tube from top down. Then, take one end of the dough and roll it up, similar to rolling a cinnamon bun. Once you reach the other end, tuck the end into the bottom. Make sure to do this part, otherwise, when you try to roll the scallion pancake out, the roll will split apart. Leave the roll to rest while you repeat this rolling method for the other 7 balls. Once all of the rolls have been made, take one roll and place it in the center of your mat. Roll it out gently into a thin circle using a rolling pin. It is okay if some of the scallions start to come out. Roll all of your pancakes out this way. (I have also tried a method where you don't roll out the pancakes, but just flatten them with a spatula while cooking. This also works but it is harder to get the pancakes as thin, so it's up to your preference). Heat your pan on medium heat. Add the vegetable oil and place the pancake down away from you. Once the center starts to bubble, it is cooked through. Make sure both sides are browned. Cook all of your pancakes or wrap them up and freeze them.
